To make vinaigrette - Heat coconut oil in a small sauce pan, over medium heat. Add shallots and bacon and cook for 6-8 minutes, or until golden. Add the vinegar and set aside too cool. Transfer the bacon and shallot mixture to a bowl and whisk in the mustard, chives and olive oil and season with salt and pepper.
Heat spiced turkey mince from Your Prep in the microwave for 2 1/2 minutes. Arrange the pine nuts in a straight line on a serving platter. Place the avocado slices next to the nuts, followed by a row of mixed herbs. Follow with the hard-boiled eggs, turkey mince, cucumber, carrot, watercress and Brussels sprouts.
Drizzle the dressing over the top and start to fill your wraps with a bit of everything. ENJOY!
