Turkey Fried Rice

Heat 1/2 tsp of oil in a large fry pan or wok over high heat. Pour the egg mixture, tilting the wok to make a large thin omelette. Slide onto a clean board, roll omelette up & thickly slice.
Heat remaining oil in the same wok. Stir-fry turkey mince for 2 minutes, breaking up and lumps. Add garlic, ginger and 2 onions and stir-fry for 3 minutes. Add vegetables and soy sauce and stir-fry for 2 minutes or until hot. Add rice and stir-fry for 2 minutes.
Serve topped with omelette and remaining onion.
