Turkey Chilli Con Carne

-500g Your Prep Turkey Mince
supermarket ingredients
-1 large red onion - finely chopped
-1 Long Fresh Green Chilli - Chopped
-3 Garlic Cloves - Crushed
-2 tbsp Tomato Paste
-400g Can Diced Tomatoes
-400g Can Black Beans - drained
-1 1/2 Cups Chicken Stock or Water
-Brown Rice
*Season with 1 x tbsp of each - dried oregano, ground cumin & paprika
*Serve with White Corn Chips, Greek Yogurt, Avocado

STEP 1

  • Heat oil in wok. Add onion, chilli and garlic. Reduce heat to medium-low. Cooking, stirring often for 10 minutes.

STEP 2

  • Increase heat to high. Add the mince and cook, breaking up any lumps for roughly 5 minutes. Add tomato paste and stir to combine. Add the tomato, stock or water, oregano, ground cumin and paprika. Bring to the boil. Reduce heat to medium-low and simmer for 25 minutes.

STEP 3

  • Add beans and cook for 3 minutes. Serve chilli con carne with brown rice, topped with corn chips, greek yogurt and avocado.
