Heat oil in wok. Add onion, chilli and garlic. Reduce heat to medium-low. Cooking, stirring often for 10 minutes.
Increase heat to high. Add the mince and cook, breaking up any lumps for roughly 5 minutes. Add tomato paste and stir to combine. Add the tomato, stock or water, oregano, ground cumin and paprika. Bring to the boil. Reduce heat to medium-low and simmer for 25 minutes.
Add beans and cook for 3 minutes. Serve chilli con carne with brown rice, topped with corn chips, greek yogurt and avocado.
