Heat turkey mince in a large casserole dish for about 5 minutes. Add red capsicum and cook for a couple of minutes.
Stir in the red thai curry paste and mushrooms and cook for 2 minutes, then add coconut milk and stock. Bring to a simmer and cook, uncovered, for 10 minutes.
Add lime zest and juice and thai fish sauce.
