Heat 1 tablespoon oil in frying pan over medium-heat. Cook onion, stirring for 5 minutes or until softened. Add garlic and paprika. Cook for 30 seconds, until fragrant. Add mince and cook for 5 minutes, or until browned all over.
Add tomato paste and 1/4 cup of water. Stir to combine. Season with salt and pepper. Add beans and cook for 2 minutes. Transfer to a bowl and set aside for 15 minutes. Preheat oven to 180 degrees. Wipe frying pan clean and drizzle with oil.
Place 1 tortilla on board. Spread with 1/4 Cup of sour cream.Top with 1/3 cup of mince mixture and sprinkle with cheese. Roll tortilla up tightly, trim and discard ends. Cut into 4 equal parts. Repeat with remaining tortillas. Arrange rolls upright in the pan, creating 2 rings, leaving a hole in the centre.
Combine salsa and peppers into a bowl. Season with salt and pepper. Spoon into the centre of frying pan. Bake for 15-20 minutes, until tortillas are golden and cheese is melted.
Meanwhile, make guacamole. Combine avocado, lime juice, salt, pepper and coriander. Mash with fork. Serve pull-apart with guacamole and sour cream.
