Preheat oven to 200 degrees. Combine seasoned beef mince, corn and beans in a large bowl.
To make salsa, combine tomato salsa ingredients into a separate bowl.
In a large muffin tray, place a tortilla disc in each, bunching up the edges to make a cup. Place in the oven for 3 minutes. Return muffin tray to bench and fill each tortilla cup with seasoned beef mince mixture & top with cheese. Cook for a further 8 minutes.
Top each with salsa and yogurt. Serve with lime wedge. Enjoy!
