-400g Can Black Beans, drained
-125g Can Corn Kernels, drained
-500g Your Prep Seasoned Beef Mince
-10 Mini Flour Tortillas
-1 Cup Grated Cheese
-150g Yoghurt
-Lime Wedges to serve

Tomato Salsa

-2 Tomatoes, Finely Chopped
-1 Tbsp Chopped Coriander
-1/2 Red Onion, Finely Chopped
-1 Tbsp Fresh Lime Juice

STEP 1
  • Preheat oven to 200 degrees. Combine seasoned beef mince, corn and beans in a large bowl.
STEP 2
  • To make salsa, combine tomato salsa ingredients into a separate bowl.
STEP 3
  • In a large muffin tray, place a tortilla disc in each, bunching up the edges to make a cup. Place in the oven for 3 minutes. Return muffin tray to bench and fill each tortilla cup with seasoned beef mince mixture & top with cheese. Cook for a further 8 minutes.
STEP 4
  • Top each with salsa and yogurt. Serve with lime wedge. Enjoy!
