-500g Your Prep Spiced Turkey Mince
-1 Red Onion, Finely Chopped
-3 Shallots, Ends Trimmed, Thinly Sliced
-1 1/2 Cup Grated Cheese
-6 Flour Tortillas
-Chucky Medium Salsa
-Sour Cream, To Serve
-Fresh Coriander Sprigs, To Serve

Tomato Salsa

-2 Tomatoes, Finely Chopped
-1 Tbsp Chopped Coriander
-1/2 Red Onion, Finely Chopped
-1 Tbsp Fresh Lime Juice

RECIPE

STEP 1
  • Preheat oven to 200 degrees. Combine Spiced turkey mince, onion, shallots and 1 cup of cheese into a large bowl.  
STEP 2
  • Place 1 tortilla on a clean surface. Top with one-sixth of the mince mixture. Place 1 tablespoon of chunky salsa on top. Roll up and place on a baking tray. Repeat to make all six. Spoon over the remaining salsa and sprinkle with remaining cheese. Bake for 20 minutes or until cheese has melted.
STEP 3
  • Whilst the enchiladas cook, make the salsa. Combine all the ingredients into a bowl. Season with salt.
STEP 4
  • Top the enchiladas with tomato salsa, sour cream and coriander. Enjoy!
