-500g Seasoned Beef Mince
-Spinach (Your Prep)

-20g Pitted Kalamata Olives
-25g baby tomatoes, halved
-1 or 2 Eggs
-1 tsp of Dried Oregano
-1/2 Lemon
-Pepper for seasoning

  • Heat in oil in a frypan with a lid over a medium heat. Add seasoned beef mince and cook for 3 minutes, or until starting to brown and no lumps.
  • Move mince to a quarter section of the pan. Add the tomatoes to the empty section of the pan and scatter with oregano then move them to a quarter section. Add the olives. Scatter chopped spinach on top of the olives and then add the black pepper.
  • Drizzle a little oil in the remaining empty half of the pan (if needed) and carefully crack the egg (or eggs) into this section. Once the translucent part of the egg has turned white, cover and cook for 3-4 minutes until the egg yolk is cooked through.
  • Squeeze a little lemon juice over the top . (You do not need to add salt to this dish as the olives are salty enough). Enjoy.
