Satay Chicken Stir Fry

Combine peanut butter, soy sauce, sugar, lemon and water in a wok over a medium heat. Bring to the boil and whisk until smooth. Reduce heat to low. Simmer for 1 minute or until sauce thickens.
Cook the noodles in a large saucepan of boiling water for 3 minutes. Rinse under cold water. Drain.
Transfer half the sauce from the wok and set aside. Add the chicken to the wok and heat for 5 minutes. Add the frozen peas and half the spring onion. Stir-fry for 2 minutes. Add noodles and stir-fry for a further 2 minutes or until heated through. Divide among serving bowls. Top with remaining sauce and spring onion.
