To make the peanut sauce, whisk together peanut butter, soy sauce, lime juice, brown sugar, and ginger in a small bowl. Whisk in 2-3 tablespoons water until desired consistency is reached; set aside.
Preheat oven to 220 degrees. Thread chicken onto skewers. Brush with oil, season with salt and pepper and place into the oven for 20 minutes (Turning half way).
Whilst skewers cook, assemble salad onto plate. Heat green beans in the microwave for 2 minutes or keep cold.
Place cooked skewers on the plate. Top with peanut sauce, sprinkle on peanuts and serve with lime. Enjoy.
