Satay Chicken Skewers and Greens

-500g Your Prep Satay Chicken
-500G Your Prep Green Beans
supermarket ingredients
-3 Cups of Shredded Cabbage
-1 Lebanese Cucumber, thinly sliced
-Roasted Peanuts, to serve
For Sauce:
-3 tbsp peanut butter
-1 tbsp soy sauce
-1 tbsp lime juice
-2 tsp brown sugar
-1 tsp grated ginger

STEP 1
  • To make the peanut sauce, whisk together peanut butter, soy sauce, lime juice, brown sugar, and ginger in a small bowl. Whisk in 2-3 tablespoons water until desired consistency is reached; set aside.
STEP 2
  • Preheat oven to 220 degrees. Thread chicken onto skewers. Brush with oil, season with salt and pepper and place into the oven for 20 minutes (Turning half way).
STEP 3
  • Whilst skewers cook, assemble salad onto plate. Heat green beans in the microwave for 2 minutes or keep cold.
STEP 4
  • Place cooked skewers on the plate. Top with peanut sauce, sprinkle on peanuts and serve with lime. Enjoy.
