Heat oil in large non-stick pan or wok. Add chicken, onion and garlic until chicken is browned.
Add Satay sauce, coconut milk, peanut butter* and mix to combine. Simmer, uncovered for 15 minutes.
Sprinkle with coriander and serve with rice.
