-4 x Large Zucchini (Halved lengthways)
-400g can diced tomatoes
-1/2 Cup shredded tasty cheese
-1 medium tomato, finely chopped

STEP 1

  • Preheat oven to 180 degrees. Use a small spoon to remove the flesh from the centre of the zucchini. Finely chop the flesh and reserve in a bowl.

STEP 2

  • Line a baking tray with baking paper. Spray zucchini shells with olive oil spray and place cut side down on the lined tray. Cover with foil. Bake for 15 minutes.

  • Meanwhile, heat a large frying pan over a high heat. Add the mince and cook for roughly 5 minutes. Add reserved zucchini flesh and canned tomato. Bring to the boil. Reduce heat to medium and simmer for 10 minutes.
