In a large pot, melt butter over medium heat. Add carrots and celery, season with salt and pepper. Cook, stirring often until vegetables are tender (5-10 Minutes). Add garlic and cook until fragrant, about 30 seconds.
Add chicken, thyme, potatoes and broth. Season with salt and pepper. Bring to simmer and cook until potatoes are tender (Roughly 20-30 minutes).
Remove from heat, garnish with parsley and serve.
