-500g poached Chicken
supermarket ingredients
-400g Mixed Mushrooms (such as button, Swiss, shiitake)
-180ml Olive Oil
-1 French Shallot, finely sliced
-2 Bay Leaves
-2 Tsp of sesame seeds
-1 Tbsp Sugar
-Salt & Pepper for seasoning
-70ml Red Wine Vinegar
-1 Skinny Baguetta
-150g Fresh Goat's Cheese
-75g Walnuts

STEP 1
  • Heat 2 tablespoons of oil in a large frying pan over high heat. Add the chicken, mushrooms, shallots, bay leaves and sesame seeds and cook for 5 minutes or until chicken and mushrooms start to colour. Now add the sugar, a good pinch of of salt and pepper and the vinegar. Bring to the boil, then turn off the heat and pour in the remaining oil. Allow the chicken and mushrooms to marinate for at least 15 minutes.
STEP 2
  • Preheat the oven grill to hot. Cut the baguette into 15-20 slices, drizzle with a small about of olive oil and toast both sides until the oven grill until crunchy. Use a butter knife and smear the goats cheese on one side of each crouton.
STEP 3
  • Crush walnuts and scatter across marinated dish. Either enjoy as an entree dish or mixed with greens to create a salad. Enjoy!
