-1.5 Cups Minute Brown Rice, Uncooked
-2 Cups Chicken Broth
-1/2 Brown Onion
-400g Can Sweet Corn, Drained
-400g Can Black Beans, Drained
-500g Your Prep Chicken
-1 Jar Mexican Salsa
-1/4 Cup Chopped Coriander
-1/2 Tsp Smoked Paprika
-1 Tsp Chilli Powder
-1 Tsp Ground Cumin
-2 Tsp Garlic Powder
-1/2 Cup Shredded Cheese
Optional Toppings: Cheese, GreekYogurt, Salsa, Green Onion

STEP 1
  • Preheat oven to 190 degrees and spray a large casserole dish with cooking oil.
STEP 2
  • Add all the ingredients (Minus the cheese and topping) into the casserole dish and mix together with a wooden spoon making sure the mixture is submerged in liquid. Cover with aluminum foil and bake for about 50 minutes.
STEP 3
  • Uncover and top with shredded cheese. Bake, uncovered for an additional 10 minutes.
STEP 4
  • Once fully cooked, let rest for 10 minutes before serving. Top with greek. yogurt, more shredded cheese, salsa and green onions. ENJOY!
