In a bowl, very gently beat eggs, salt and pepper and water together. Set aside.
To make filling, melt butter in a small saucepan, add vegetables (as many as you desire), salt and pepper, and cook slowly without browning. Keep hot.
Shake saucepan to level out the filling, then pour the egg mixture on top. Shake the pan gently as the eggs cook. When the omelette is set, loosen the edges and run a knife underneath.
Slide the omelette onto a plate. Enjoy.
