-2 packets of overnight oats (Your Prep)

supermarket ingredients
-2 Eggs
-150ml Yogurt
-50ml Rapeseed Oil
-100g Apple Sauce or Pureed Apples
-1 Ripe Banana
-4 Tbsp Honey
-1 Tsp Vanilla Extract
-200g Wholemeal Flour
-1 1/2 Tsp Baking Powder
-1 1/2 Tsp Bicarb Soda
-100g Blueberry
-2 Tbsp Mixed Seed for topping

STEP 1
  • Heat oven to 180 degrees. Line a 12-hole muffin tin with 12 large muffin cases. In a bowl, mix the eggs, yogurt, oil, apple sauce, banana, honey and vanilla.  
STEP 2
  • Tip the remaining ingredients (Minus the seeds), into a large bowl, add a pinch of salt and mix to combine.
STEP 3
  • Pour the wet ingredients into the dry and mix quickly until the batter is smooth. Divide between the cases. Sprinkle each muffin with the mixed seeds. Bake for 25-30 minutes, until golden and rises.
STEP 4
  • Remove from the oven and transfer to a wire rack and leave too cool.
